WHere is a simplified interpretation of a beverage from our latest menu. It's a batch pre-mixed that is bursting with flavours of the holiday season, rendering it ideal for your celebration. Save the extra citrus syrup to use in brunch beverages, puddings, or to make another batch of this cocktail.
Bikini
Yields 10 people
For the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Method
For the Syrup: Combine all the ingredients inside a pot, bring to a gentle boil, stirring so the sugar melts. After that, turn off the heat allowing it to cool down entirely. Pour into a sealable bottle, cap it and refrigerate it chilled, it can be stored for up to four weeks.
Preparing the Cocktail Base: Pour every liquid ingredients into a sizeable container, leave to sit for 60 minutes, then filter it , ideally through muslin, so it's fully clarified.
For serving: Pour 85ml of the premix into a cocktail shaker packed with ice, gently stirring lightly for one minute to cool it down. Strain into an chilled martini glass or similar, garnish with a few cranberries and complete it by giving it a quick spritz of the essential oil above the glass.
